Quick Weekday Dinner Recipes
A favorite pastime of mine is cooking. I love getting the pots and pans out and just going to town … it relaxes me and is so satisfying. But just like everyone else ––when you come home from work, sometimes the last thing you want to do is cook (especially when you live on your own as it can cause you to settle for less than home-cooked meal). Thanks to delish.com they have compiled a list of amazing quick weekday dinner recipes that will take no longer than 20 minutes to cook up. These are our top three to-die-for faves from the list.
1. Cobb Salad

The king of all salads, the cobb salad is definitely one to rule! This salad looks like you spent hours and hours cutting and mincing and preparing when in total it’ll take you less than 20 minutes.
Ingredients
1/3 c. red wine vinegar1 tbsp. Dijon mustard
2/3 c. olive oil
kosher salt
Freshly ground black pepper
1 head romaine lettuce, coarsely chopped
4 hard-boiled eggs, peeled and quartered
12 oz. cooked chicken, diced
8 slices bacon, cooked and crumbled
1 avocado, thinly sliced
4 oz. crumbled blue cheese
5 oz. cherry tomatoes, halved
2 tbsp. Chopped chives
Directions
1. In a jar, shake together vinegar, mustard, and oil and season with salt and pepper.
2. On a large platter, spread out lettuce, then add rows of hard-boiled egg, chicken, bacon, avocado, blue cheese, and cherry tomatoes.
3. Season with salt and pepper, drizzle with dressing, and garnish with chives.
2. Broiled Salmon

A personal fave of Fashioned, many of us could live off of eating just this fish alone. There is a vast number of wonderful recipes on how to prepare it, from honey glazed to lemon garlic!
Ingredients
4 (4-oz.) salmon fillets
1 tbsp. Grainy mustard
2 cloves garlic, finely minced
1 tbsp. finely minced shallots
2 tsp. fresh thyme leaves, chopped, plus more for garnish
2 tsp. fresh rosemary, chopped
Juice of 1/2 lemon
kosher salt
Freshly ground black pepper
Lemon slices, for serving
Directions
1. Heat broiler and line a baking sheet with parchment. In a small bowl, mix together mustard, garlic, shallot, thyme, rosemary, and lemon juice and season with salt and pepper. Spread mixture all over salmon fillets and broil, 7 to 8 minutes.
2. Garnish with more thyme and lemon slices and serve.
3. Spaghetti with Turkey Ragu

Now some of you may be thinking that Turkey spaghetti might mean Thanksgiving turkey, but in this recipe there is no gobble-gobble as this dish calls for ground turkey! Cooking with ground turkey generally takes no longer than about 5 minutes to cook up and it's a lot healthier for you.
Ingredients12 oz. spaghetti
1 large onion, diced
2 cloves garlic, minced
1 large carrot
1 lb. ground turkey
kosher salt
Freshly ground black pepper
1 28-oz. can crushed tomatoes
2 tbsp. freshly chopped rosemary
Freshly chopped parsley, for garnish
Freshly grated Parmesan, for garnish
Directions
1. In a large pot of salted boiling water, cook spaghetti according to package directions until al dente. Drain and return to pot.
2. Meanwhile, in a large skillet over medium-high heat, cook onion, garlic, and carrot until tender, 5 minutes. Add turkey and cook until golden, 6 to 8 minutes, then season with salt and pepper. Add crushed tomatoes, and rosemary and let cook, 5 minutes.
3. Toss spaghetti with ragu and garnish with parsley and Parmesan.
