Instant Pot Taco Soup

As we enter into November, the weather is starting to get chilly which means soup season is here. I love curling up on the couch with a nice hot bowl, a cozy blanket and a good movie. A favorite pastime of mine is cooking. I love getting the pots and pans out and just going to town … it relaxes me and is so satisfying.  But just like everyone else ––when you come home from work, sometimes the last thing you want to do is cook (especially when you live on your own as it can cause you to settle for less than home-cooked meal). Thanks to Eating On A Dime  she has written up a quick and easy 15 minute recipe for Taco Soup.

Ingredients:


  • 1 pound of ground beef
  • 1 tablespoon homemade taco seasoning (or ½ packet of taco seasoning mix if store bought)
  • 1 teaspoon of garlic salt
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • ½ onion diced
  • 1 cup frozen corn
  • 1 can of black beans
  • 1 can of kidney beans
  • 1 can of crushed tomatoes (or diced tomatoes)
  • 2 cups of water (or chicken broth)
  • Shredded cheese and tortilla chips for toppings
Directions: 
  1. Turn the Instant pot on the saute setting.
  2. Brown the ground beef. Drain any fat.
  3. Toss everything else in the Instant pot (except for the toppings).
  4. Add the lid and lock and set the valve to “sealing”.
  5. Set the pressure for 5 minutes.
  6. Do a quick release and stir to combine.
  7. Serve with shredded cheese and tortilla chips and any other toppings you would like
